We’re pleased to share the release of two new single malt whiskies this autumn that were created using both Irish-harvested peat and Irish-grown barley – the first in a generation to do so. The releases celebrate a return to the traditional ways and flavours of irish whisky production Out of necessity since the dawn of time, peat has been the primary fuel source in rural Ireland, with its sweet pungency familiar to generations gathered around the hearths of ancient thatched cottages. This same diffused aroma cloaked barley dried over peat smoke by illicit distillers, a custom that began to die out in the 1850s.
As part of our pioneering quest to unearth whisky’s most natural flavours, we dried barley grown on two Single Farm Origins of Ballybannon and Fenniscourt, Co. Carlow, using peat cut from Ballyteige in Co.Kildare. Each farm’s harvest was peated to different levels: Fenniscourt’s barley to 38ppm and Ballybannon’s barley to 47ppm.
The bottlings are the latest in our Arcadian Farm Origins, which previously saw the first organic Irish whisky and the world’s first biodynamic whisky. This series showcases the intensity of natural flavours and honesty from the old ways, and represent real rarity because of the true scarcity of the raw materials."

Fenniscourt Bottled at 50% ABV. Peated to 38ppm.
Approx. 11.500 bottles each, release End of September 2022.

At Waterford we are fascinated by the natural flavours of whisky so I was curious to see what real Irish peat brings to the table, flavours that have been long lost, and ultimately whether terroir trumps peat in the flavour Olympics.
We selected two Single Farm Origin barleys – with distinctive terroirs – to see if those naturally occurring flavours shone through or were in fact dominated by peat.
Finding the right quality Irish peat was a challenge but the greatest problem of all was there were no operational kilns left in Ireland; the knowledge had been forgotten. We needed Scottish help.”

Hintergrund: Wo wird die Waterford-Gerste gemälzt?
Das Waterford-Malz wurde und wird nach wie vor mit irischem Torf - turf - in den schottischen Glenesk Maltings bei Montrose in Schottland nach den Vorgaben von Waterford produziert.

In den großen Steeping Vats - Weichbottichen - quellte und weichte die irische Gerste von Ballybannon und Fenniscourt separat erstmals 2018 ein. In riesigen Boby Drums keimte sie mit drei Wassern. Die Single Farm Batches wurden für vier bzw. fünf Tage belüftet, die Keimung angeregt. Anschließend wurde zwölf Stunden mit irischem Torfrauch - das Malz eingeraucht. 21 Stunden dauerte die Trocknung des grünen Malzes im Kiln. Die Keimung des grünen Malzes stoppte, das Malz wurde lagerfähig. Die folgenden Fotos zeigen den Furnace von Glenesk in dem das irische Torf aus Ballyteige im County Kildare den Rauch entfaltet. Das richtige Schüren des Torfes führten die Spezialisten von Glenesk aus.
Die Glenesk Maltings sind nicht zu besichtigen. Es gibt kein Besucherzentrum.

Glenesk Malting. Peated Malt für Waterford
Eine der ersten Galant-Henning Pneumatic drum malting Anlagen wurde in der Speyburn Distillery in Rothes von 1897 bis 1967 betrieben. Sie ist noch heute dort zu sehen.
In den Glenesk Maltings in Montrose arbeiten die klassischen Boby Drums wie auch in den Maltings von Diageo in Port Ellen, Islay.

Das System um 1880 erfundene Malzsystem wird im Brauwesen heutzutage vielerorts in modifizierten und technisch optimierten Formen eingesetzt. Die ersten pneumatischen Darrdrommeln, in denen Keimen und Darren effizient rohstoffschonend möglich wurden, installierte Galant im Berliner Ortsteil Pankow in der gleichnamigen Mälzerei für eine industrielle Produktion von Braumalz.

Meanwhile we also have two very special new releases coming this Autumn for our friends in Europe and around the world. It is the time of year when we release our new vintage of Peated Single Farm Origins – the whiskies that reintroduced real Irish barley and true Irish peat to each other for the first time in generations. Both featuring only Irish barley and Irish peat, Lacken (which our friends in France have tried in unpeated form) weighs in at a mighty 57ppm – higher than almost every Islay whisky – whilst Woodbrook, at a mighty 74ppm, is the most heavily peated release from an Irish distillery in history...
PEATED SINGLE FARM ORIGINS: LACKEN & WOODBROOK
Our great discovery from distilling those first Peated Single Farm Origins was that, far from being overwhelmed by the flavours of peat, the nuances of terroir in each farm remained dominant over those of turf. Ballybannon and Fenniscourt were still unmistakeable in their terroir thumbprint. Encouraged, we resolved to take our peat levels a step further.
This vintage’s peat source remains the same: the sphagnum-rich, ultra-deep inland raised bog of Ballyteige, Co. Kildare.
But, having gained confidence from our first experiments, we dug deeper, cutting peat for our second vintage from further down in the bog. Here, where the turf is darker, richer, and — crucially — moister, we find peat that burns slower in the malting process; imparts more flavour, a higher ppm.
Once again, we chose two farms. Lacken, which some of our friends in France will have previously tried in its unpeated form, peated to 57ppm — higher than famous Islay whiskies such as Port Charlotte or Laphroaig — and Woodbrook, peated to a mighty 74ppm — the most heavily peated Irish whisky of all time...
...Sadly there will be no more barley from Woodbrook. Since the 2019 harvest that gave us this whisky, these fields have vanished from the map. A housing estate stands where there was once barley. We’ll never get whisky from here again — this is a lost Single Farm Origin."

Waterford: The Story of Peated Barely made in Scotland at Glenesk Maltings

Boort Malt
Ebenso wie die irische Minch Malt Betriebe in Athy gehören die Glenesk Maltings - Pauls Malt - südlich von Aberdeen gelegen, gleichfalls zum globalen Unternehmen Boort Malt. Der belgische Konzern betreibt weltweit auf fünf Kontinenten 27 Mälzereien, davon zwei in Schottland. Die andere schottische Anlage befindet sich in Buckie. Dort betreiben die Mälzer seit Juli 2022 den weltgrößten Kiln: "The new, modern kiln measures 41 metres in diameter and has a capacity to hold 600 tonnes of malt per batch." Quelle: Boort Malt
Anfang 1968 arbeiteten in Glenesk 24 von Robert Boby Ltd in Bury St Edmunds hergestellte Drums, die Getriebe kamen von Crofts Egineers in Bradford. Jede Drum vermälzte 31 Tonnen Gerste.
Die Maltings entstanden neben der 1897 gegründeten Glenesk/Hillside/North Esk Distillery. Die Destillation wurde 1985 eingestellt. Nach dem Verlust der Lizenz 1992 wurden große Teile der Brennanlage abgerissen. Einige Dunnage Warehouses blieben erhalten, wobei auch hier der Verfall allmählich zunimmt.

Das Green Malt für die Waterford Distillery wird in den Glenesk Maltings bei Montrose in Schottland getorft. Anfang Juni 2022 wurde das feuchte Grünmalz im Kiln unter Rauch gesetzt. Der Torf kam aus Ballyteige im County Kildare.
Der Autor war zufällig anwesend.

The Flavours of Peat
"Peat is an evocative, even iconic flavour.
The tunes it can play when it interacts with malted barley from different farms and terroirs are myriad and fascinating.
And of course, as with unpeated single farm whiskies, they form new building blocks with which to layer more complex cuvées; additional instruments in the most orchestral whiskies.
But it is always important to remember that, where the flavours of peated whisky are concerned, it is ‘whisky’ and not ‘peated’ that is the operative word.
And heartening to think that, even when wearing a cloak of peat smoke, it is the nuances of terroir that drive a whisky’s flavour…if one cares to look for them."

21 % Virgin American Oak Casks,
11 % Vin Doux Naturel Fässern aus dem Weinbaugebiet Sauternes, wo im Tal der Garonne, des Département Gironde edelsüße Weißweine von renommierten Weingütern wie Château d’Yquem vindiziert werden.
Das Alter gibt der Waterford-Whisky-Macher mit "...drei Jahren, acht Monaten und sieben Tagen..." an. Destilliert wurde das Torfmalz von Glenesk am 17. September 2018 und der Whisky abgefüllt im August 2022.
